Asparagus is one of the healthy thing I like to eat and make various recipes with it. You can simply try it in pasta, soup or just with lemon aioli. Here is great summer recipe with asparagus for side dish or just enjoy as it is;
Ingredients:
Asparagus (2 bunch)
Parsley (chopped about 2 cups)
Olive oil (2 Teaspoon)
Lemon (1 for lemon juice and Lemon Zest)
2 Garlic cloves (minced)
Salt and Pepper per taste
Recipe:
- Boil 2 bunches asparagus 4 to 5 minutes; drain.
- Mix 1/2 cup chopped parsley, 1 tablespoon each lemon zest and juice, 2 minced garlic clove, 2 tablespoons olive oil, and salt and pepper in a bowl.
- Drizzle the asparagus with olive oil and top with the parsley mixture.
- Enjoy
